Remember three years ago when replicating well known chocolate bars became a thing?! Okay, so it might no longer be fashionable to post healthier alternatives to high street candy, but who doesn't love a sweet snack?!
This recipe sounds fairly complicated, but it's actually really simple. Check out my Instagram video to see just how easy it is to make your own snickers bars at home!
INGREDIENTS
10 plump dates (take out the stones and soak for 10 mins in boiling water)
3 heaped tbsp almond butter
75ml maple syrup
Pinch of salt
1 tsp vanilla extract
150g ground almonds
75g chopped pecans
3 tbsp coconut oil
2 tbsp maple syrup
50g cacao powder
1 tbsp vegan cream
METHOD
Add the dates, almond butter, maple syrup, salt and vanilla to a strong blender and whizz until smooth
Spoon out 2 heaped tablespoons of the nutty caramel mixture and add to the ground almonds. Stir well to create a sticky nougat
Line a silicone baking tray with the sticky almond mix
Spoon the remaining blended nutty caramel on top and press pecans into the mix
Place in the freezer to set (2 hours or more)
Remove from the freezer and use a warm knife to slice the block into bars (I made 6) Return to the freezer
Place a bowl over a pan of boiling water and add coconut oil to the bowl, then maple syrup, then raw cacao powder - stirring continuously
Add vegan cream to create a really rich, creamy chocolate. If at any stage your mixture gets too thick, stir in some hot water or cream. All the mixture to cool to room temperature
Remove the bars from the freezer and dip them in the chocolate. Rolling to coat well
Place on a baking sheet and repeat with each bar. Return to the freezer to fully set
Thaw for ten minutes before serving and store in the freezer
