I absolutely love this recipe! Made with apples fresh from the tree and onions fresh from the earth. It's such a simple, delicious combination and spooning it into little glass jars makes beautiful gifts.
INGREDIENTS
1kg apples (chopped into small cubes)
4 onions (finely chopped)
350g coconut sugar
350ml apple cider vinegar
250g raisins
1 tsp ground ginger
1 tsp ground coriander
1/2 tsp salt
METHOD
- Put all the ingredients into a saucepan. Gently bring to the boil
- Simmer over a low heat for an hour, stirring occasionally to stop the chutney sticking to the pan
- When it's very thick, the chutney is ready. Allow to cool
- Spoon into sterilised jars and seal
- Store in a cool, dark cupboard for a couple of months before eating
