Hands up if the kids have asked for snacks at least fifty times today!
The UK went into Corona Lockdown last night. BoJo asks that we don't leave the house unless we're working in an essential industry or going out for a food shop. It's day two of the kids being off school and already the joys of home schooling are beginning to wane.
My godson Jack lives next door and we're very rural so he's been helping me dig manure, wash the car, paint various things and plant seeds. It's been fun ... but I can hand him back after an hour!! Friends with little ones tell me the endless requests for snacks are driving them crazy! With that in mind I thought I'd share this no bake Energy Bite recipe I conjured up for Grace & Freya. It's a simple one the little ones can join in with. And you can adapt many of the ingredients to what you have in the cupboard.
INGREDIENTS
200g muesli (or oats with nuts & raisins)
2 tbsp chia seeds (flax work too)
2 tbsp sunflower seeds (flax or pumpkin work too)
2 tbsp cacao powder (or cocoa if you can't find any)
4 tbsp nut butter (I used almond but see what you can buy)
75ml maple syrup (or honey if non vegan or agave)
Pinch of salt
METHOD
Stir all the ingredients together in a mixing bowl. If the mixture is too wet, add some more oats. You want it sticky but not soggy
Squish a scoop full of mixture together in your hands and roll into a ball between your palms. Obviously wash hands extra well when handling food
Pop in the fridge to firm up
