Last weekend became a full on kitchen spring clean mission! Every packet, box, tin and jar got taken out of the cupboards. I had so many open packs of nuts and seeds. Rather than leave them unused I poured each one into a giant mixing bowl, added some coconut oil and mixed spices and baked up a delicious granola.
The beauty of this recipe is that you don't need to use the same ingredients I've used. Go for whatever you've got available. Mix up the flavours. Why not try cinnamon, Chinese 5 spice, vanilla essence, coconut, choc chip ... lots to experiment with.
Not only does it taste amazing, it stores brilliantly for a fortnight and makes the house smell absolutely amazing whilst baking!
INGREDIENTS (large 3 litre jar)
200g rolled oats
50g Pumpkin seeds
50g Flax seeds
50g Sunflower Seeds
50g Walnuts
75g raisins (other other dried fruit)
1/2 tsp salt
75ml maple syrup
150ml coconut oil (melted)
1/2 tsp cinnamon
1/2 tsp cloves
1/2 nutmeg
METHOD
Preheat the oven to 170C
Stir all the ingredients except the raisins together in a big mixing bowl
Spread on a large baking tray and oven bake for 25 - 30 min. Checking regularly to ensure your granola is turning a rich golden brown and not burning. Leave in the oven with the door slightly ajar to cool completely (at least 1 hour)
Remove from the oven, stir in the raisins and store in an airtight jar in the cupboard for up to 2 weeks
