Flapjacks are one of my favourite snack foods. They're great for taking on long journeys with us to ensure we always have something tasty to hand. These are particularly delicious, made with a combination of maple and molasses to give them a rich, almost bonfire-night flavour!
INGREDIENTS (makes 16 squares)
- 250g vegan butter
- 200g rolled oats
- 200g regular oats
- 100ml maple syrup
- 50ml blackstrap molasses (optional but great for iron)
- 100g coconut sugar
- Handful of chopped pecans
- Pinch of salt
- Pinch of cinnamon (optional)
METHOD
- Melt the butter in a pan. Add the maple syrup, molasses and coconut sugar and stir together well over a very low heat until everything is nicely dissolved
- Add the oats, chopped pecans, salt and cinnamon and stir together well
- Press firmly into a square silicone tray and oven bake for 20 - 25 mins at 170C
- Remove from the oven and allow to fully cool before slicing into squares (being impatient will result in warm, crumbly flapjacks falling to bits!)
- Store in a tin at room temperature for up to a week
