These make a quick and tasty, no-bake, protein-rich snack. Full of nutrient dense ingredients and really lovely if you need a sweet treat to take the edge off those sugar cravings.
INGREDIENTS (makes 15 - 20)
1 tin chickpeas (400g) drained (keep the water for vegan meringue)
50g nut butter
Pinch of salt
25 to 50ml maple syrup (depending how sweet you like it)
50g rolled oats
50g of raisins
pinch of cinnamon
METHOD
Add the drained chickpeas, nut butter, salt and syrup to a food processor and pulse together
Scrape the sides down and add the rolled oats, then pulse again
Spoon the mixture into a bowl and add the raisins and cinnamon, stir together well
Scoop a little mixture into your hands and roll into a ball. Repeat x 15
Place the balls on a sheet of baking paper and allow to cool in the fridge
